Files generated by Eclipse have Cp1252 encoding by default.
To be sure that characters with accent (some french characters for example) are correctly shown on your web pages or on other OS, the best choice is to use UTF-8.

Go to Windows (menu bar) > Preferences > General (scroll) > Workspace :
schema UTF-8 file encoding with Eclipse

Note : If you want to change the encoding of your file with Eclipse you can do a right click on your file then : Properties > Resource and take a look at Text file encoding. Another solution is to use Notepad++, go to Format and click on Convert to UTF-8 without BOM.
